Happy February!

For breakfast this morning I had 1 pink grapefruit with Sweet N’ Low, some applesauce, and some flavorless seltzer. Now it’s lunch time and I am having a Yoplait Whips yogurt. French Vanilla Latte flavored. SO GOOD! I am also having 1 red apple and 1 green apple. I eat apples every day, about 5-6 of them, and here’s why…

Apples are very rich in important antioxidants, flavanoids, and dietary fiber. The phytonutrients and antioxidants in apples may help reduce the risk of developing cancer, hypertension, diabetes, and heart disease. Also, they’re negative calorie foods, so they really rev up the calorie burning process.

Had a second lunch around 2:30 p.m. lol...I made myself a salad of cucumbers, red bell peppers, green bell peppers, white onions and caesar dressing. No lettuce today. The salad was super yummy!

 

2/2/2-19

For dinner last night I had an apple and a banana, and I ate it at midnight lol. I had fallen asleep around 5 p.m. slept until midnight, went to the restroom, ate some fruit, and fell asleep until 7 a.m. MS really wears me out at times.

Today for breakfast I am having 1 red apple, 1 green apple and 1 red raspberry Yolait “original” yogurt. I never realized how much I liked apples until I kinda forced myself to start eating them. Now I am buying 6 pounds of apples at a time. I forgot to mention I had a 12 ounce can of pain seltzer with each meal. No calories. No chemicals. Just sparkling goodness.

I have the worst cramps ever today! Mother Nature is a whore! Seriously, I have been going thru this for 32 years…If men had to go thru women’s issues for just one day of their lives, we would find them all curled up in a ball, crying under their beds.

Any time I crave sweets I eat dates. Have you ever tried dates? They’re so good!!! They’re also another great source of fiber and potassium. So, for breakfast I had some dates and some blackberry Yoplait yogurt. So good! I almost forgot, I had my newest obsession…Fuji Apple Fruit Crisps. They’re freeze dried apple slices…Replace your potato chip cravings with these bad boys, they’re tastier! Also, only 40, fat free, calories for a 0.35 oz. bag! I buy them by the box. 6 single serving bags per box.

Now, let’s get gross for a minute…When you change your way of eating to healthier, weight does start to fall off…in the toilet…Lots of fruits and veggies…Just make sure you stock up on toilet paper. No one ever wants to talk about it but seriously, we sweat, pee, and poop out our weight loss…So grow a pair, buy some 2-ply, and poop yourself to a healthier you! 😊

Yesterday I spent the day with friends talking and playing card games. I brought my own food since I knew I was going to be there for the entire day. We get together every Sunday. It's really a lot of fun. So...I brought some of my apple chips, some dates, a banana, some dried apricots and some seltzer, and I just ate a little here and there and was very satisfied. I lost the card games, but I still had a blast and enjoyed all of my healthy snacking.

Today for breakfast I am having pears and a grapefruit with Sweet N' Low and some seltzer.

Every day this new lifestyle of being healthier is getting easier and easier. Finally, I have found something that works for me. It only took 20 years...

Lunch time is crunch time…Big bowl of raw veggies with 2 tablespoons of blue cheese dressing…YUM!

Let’s talk about probiotics. I take 2 every morning. The kind I take are Digestive Advantage Probiotic Gummies. They’re quite tasty.

Probiotics are live bacteria and yeasts that are good for you, especially your digestive system. Many studies say that they help with thyroid disorders and keeping you regular. My blood tests and bathroom visits are proof enough for me! My thyroid is very out of whack and I am allergic to every thyroid med. out there, but the probiotics have started to help me a lot!

I had an odd but tasty breakfast. I had my favorite, a blackberry Yoplait, but it wasn't enough, so I also had an entire cucumber sliced with some blue cheese dressing. I do plan to cut out the salad dressings and start to use only different flavors of salsa, but I have all of these dressings that I bought before I started the diet and I will not throw them out. They cost too much! I did however give away all of my non-diet food to a friend who needed a little help. I was happy to help feed a family. In the past I have been in those shoes, so I refuse to throw anything out that someone else can benefit from. I always donate clothes to the women's shelter and such...

I woke up feeling pretty good today. Not as much pain as usual. My back is ok and my muscles feel sorta relaxed…It’s absolutely amazing!

For breakfast I am going to have some pink grapefruit, and some peaches. Canned peaches. Yes, fresh is better but, the slimy, canned peaches that are in natural juice…I really just love the hell outta them!

Later on today I am going to post some of my favorite recipes that I have created. Fried potatoes I think will be my first recipe…Frying without oil of course. Crispy, spicy, taters…YUM!

A few people have asked me how I can be satisfied eating only fruit, vegetables, and yogurt…It’s because I am eating huge amounts of food! For lunch today, I am having some broccoli slaw. It contains broccoli, carrots, and red cabbage. I am eating an entire pound of it. An entire pound of food and only 125 fat free calories. There’s fiber, calcium, iron, and potassium in this salad. If you feel like a little stir-fry, this slaw is great for that too. I buy it by the 1 pound bag at Wal-Mart. The brand is Marketside and it is $2.48 per bag. Can’t get a big salad from a restaurant for such a low price. I am also having a seltzer and an apple. There’s no way not to be full on this diet.

Last night all I had was an apple for dinner. My lunch was so late, and I ate so much, I wasn’t very hungry.

This morning I am having 1 red apple and 1 green apple for breakfast. I like apples in the morning, they seem to give me a little kick of energy. With MS my energy is so limited that anything that helps me regain some of it is wonderful!

For lunch I am going to have more broccoli slaw. It’s so damn good and filling and low in calories and fat free…I am very proud of myself. This is the first diet I have ever done that I truly believe can be a lifestyle change for me. A permeant fix. And, it’s all because I am never hungry. I just chomp on fruit and veggies all day long. Pounds are falling off and pain is lessening, and energy is boosting and damn, I found the answer to life lol.

For dinner last night I just had some fresh fruit. It was quite good. Now for breakfast I am having 12 ounces of raw veggies. Cauliflower, broccoli, and baby carrots. I felt like a little crunchy.

Looking in the mirror this morning and I am down to almost only 1 chin...who knew I wasn't supposed to have more lol.

The true test will be if my new jeans fit…We shall see! I will take a pic if they do.

I have a little crock pot and I love to make what I call vegetarian chili in it. I use 2 cans of beans, any kind. Today I used garbanzo beans and black beans. You can use whatever kind you like too. I then add half of a small onion diced up. A white or yellow onion. I add garlic salt, 1 cup of salsa (any kind), some hot sauce, some black pepper, and some chili powder. I then leave it in the crockpot on low for about 3 hours and it’s done, and it is lunch and dinner for the day.

For breakfast I am having a grapefruit. My head is pounding. I am getting a head cold, so I am also sucking on zinc lozenges. They work miracles!

The chili I made yesterday was so incredibly good, I am making more for today. I am using garbanzo beans and pinto beans today. The same seasonings and onions and salsa, but different beans because that’s what I have.

For breakfast I am having one green apple and one red apple and some seltzer.

I have developed a bit of a cold, so I added some extra spices (black pepper) to the chili to help unclog my sinuses. The spicier the better in my opinion when it comes to chili, so I added some hot sauce. It is going to be amazing!

Well, it is 11:47 a.m. and all I have had is half an apple…Of course I am sicker than sick. I have pneumonias and I feel like I am just one big ball of snot. Sexy, right?

 

2/15/2019

 Well, I haven’t been blogging because I have been in the hospital for the last 3 days with pneumonia and RSV. I have, however, been following my diet. The cafeteria menu is really quite extensive. I have been drinking unsweetened tea with lemon and ice water. I have been eating fruits, veggies, black bean veggie burgers and this morning, a little oatmeal with slices of banana. Not too shabby.

 

2/16/2019

 I am still in the hospital. This morning for breakfast I had a veggie omelet. No cheese. Egg whites only. I also had some fresh fruit salad which was made up of pineapple, honey dew, cantaloupe, and red grapes. I also had some hot tea with lemon and 1 Sweet N’ Low. Quite tasty indeed!

I feel absolutely awful. Pneumonia and RSV are no joke!

Breakfast time. I am finally starting to feel better. I have been out of the hospital for about 3 days now…So for breakfast I am having Tuscan Seasoned Broccoli…Sounds fancy, right? That’s because I am fancy like that…Just kidding. It is a Green Giant Steamers, and it is yummy! I am also having an apple. Why so many apples? I think I have answered this question once before, but I am going to elaborate on it…It’s because of the pectin. Apple pectin is a type of soluble fiber naturally present in apples. It's used for a number of health conditions, such as to improve their digestive health and ease common digestive complaints.

Cheating…Have I cheated? Yup. One time, one meal, yesterday. One time in 2 months is not awful in my opinion. I had such a craving for Chinese food though and it was making me crazy, so I just got some Chinese food for lunch. All veggie, and all super yummy! Today though, I am not doing what I have always done in the past, I am not giving up because of one over indulgence. I am right back to eating super healthy and I feel good about it. I needed a cheat to keep my sanity. Changing my entire food regimen and lifestyle of the last 20+ years is hard, and for the most part I am adjusting well.

I had a pretty big breakfast this morning. A pink grapefruit with Sweet N Low, a small red apple, a banana, and some blackberry Yoplait. It was so good! Now, it’s noon and I am having a heaping serving of my vegan chili. Very zesty and filling. One of my fave. foods!
